Correction: Cover all waste containers when not in continuous use.

Utensils - In-Use - Between-Use Storage Observation: Dispensing utensils improperly stored between uses.
Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.

Pre-Opening
Items that must be corrected before a permit can be issued: 1. Put soap and paper towels at all hand sinks. 2. Put working thermometer in all cooler units. 3. All cooler units must maintain 41 degree F or less at all times. 4. All freezer units must keep all items frozen. 5.Put self closures on rest room doors. 6. Put a covered trash receptacle in rest rooms. 7. Seal all non moving equipment to walls and floors ( 3 compartment sink, hand sinks,etc). 8. Obtain sanitizer test strips for quatnary ammonium sanitizer. 9. Obtain at least a temporary Certificate of Occupancy for establishment. Once all items are corrected contact me at 204-9766 to schedule an opening inspection.. No violation noted during this evaluation.
