*Facility very neat and clean.
*Noted splash-less bleach being used for floor cleaning. While this product is acceptable as a cleaner, splash-less bleach and scented bleaches are not sanitizing or disinfecting. Please ensure that if bleach is used as a sanitizer plain bleach or concentrated plain bleach is to be used to ensure that surfaces are disinfected and sanitized.
*drink dispenser was observed clean, ensure that nozzles are taken down and sanitized at least once every 24 hours.
*cutting boards noted out of compliance during previous inspection had been replaced.

  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site)
    Observation: The ready-to-eat (RTE) commercially processed foods in the refrigeration unit was not properly dated for disposition after opening. Observed lunch meat, sausages and hotdogs were in ziploc bags in the true reach-in and were not dated with a throw-out date.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Food - Standards of Identity (corrected on site)
    Observation: Observed sausages and hotdogs in ziploc bags in the true reachin refrigeration unit with out the original packaging to show what the food was.
    Correction: Packaged food shall comply with standard of identity requirements in 21 CFR 131-169 and 9 CFR 319 Definitions and standards of identity or composition, and the general requirements in 21 CFR 130 - Food Standards: General and 9 CFR 319 Subpart A - General. Please ensure when opening the packaging the original pacakging is placed inside the bag as well to ensure proper identification of food and to prevent possible allergy contaminiation. Names of items were written on bags while inspector onsite because original package had been discarded. Ensure future items are stored with the original packaging.

  • Equipment - Cutting Surfaces
    Observation: The cutting board(s) along the food preparation area are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
    Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

NOTES:
Overall, a mixed inspection. Outside trash area observed neat and free of debris. Dry food storage area was well organized and products were found off the floor. Proper food storage in reach-in refrigerator observed. Discussed four-hour time limit of food being stored out of refrigerator as a public health and food safety control. Also discussed proper reheating temps for food service. Thermometer in prep unit needs to be replaced to ensure proper temperatures are being reached. Ensure that food-grade products are used when in contact with food. Discussed employee health and gave employee health flyer.

    Observation: Sliced cheese observed cold holding at improper temperatures.
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The prepared ready-to-eat (RTE) chicken salad in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and "consume by" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Critical: Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils*
    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: #1: ice machine in both rear and front of restaurant
    Correction: #2: scoop for ice stored on unclean surface.
  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition
    Observation: Vent filters in the hood system are not being maintained in a clean condition. Built-up of grease observed in the hood system.
    Correction: Maintain hood system vent filters in a clean condition. Clean on a regular basis to prevent the build-up of grease.

Facility has shown much improvement from previous inspection. The non-functioning beer cooler has been removed. Pest control is conducted on regular basis with certified operator, pest harborages have been sealed. All items have been removed from floor and utensils are being stored correctly/kept clean.
No violation noted during this evaluation.

    Observation: Harborage conditions exist. large german cockroach infestation observed. live and dead roaches found across entire kitchen
    Correction: Eliminate harborage conditions. Insects and other pests are capable of transmitting disease to man by contaminating food and food-contact surfaces.
