| Discussed proper cooling procedures. Items being cooled (ex. cut tomatoes, tuna salad, seafood salad, other prepped/portioned meats - teriyaki chicken, etc.) should be cooled to 41°F within 4 hours. Items in the cooling process should be left uncovered in a protected area (usually the top shelf) of the cooling unit. Recommend pre-chilling ingredients (when possible). Discussed use of the 3-vat sink. Remember to use drainboards and that your current sanitizer has a 1 minute contact time.
