  • Critical: Eating, Drinking, or Using Tobacco* (corrected on site)
    Observation: The an employee is drinking from an uncovered container in the food preparation area.
    Correction: Employees may drink from a closed beverage container if the container is handled to prevent contamination of (1) The employee's hands, (2) The container, and (3) Exposed food, clean equipment, utensils, and linens, and unwrapped single-service and single-use articles.
  • Critical: Food - Potentially Hazardous Food - Hot Holding* (corrected on site)
    Observation: Potato Soup was hot holding at improper temperatures.
    Correction: Discard the food and ensure that potentially hazardous foods for hot holding are maintained at 135°F or above to inhibit the growth of harmful bacteria.
  • Equipment and Utensils, Air-Drying Required (corrected on site)
    Observation: Lexan food containers were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.

    Correction: Discard the food and ensure that potentially hazardous foods for cold holding are maintained at 41°F or below to inhibit the growth of harmful bacteria.

    Observation: Lexan pans and other pots were found stacked while wet after cleaning and chemical sanitization.
    Correction: Items must be allowed to drain and air-dry before being stacked or stored to allow evaporation of chemical sanitizer and moisture that may encourage microbial growth.
  • Equipment, Utensils, Linens, and Single-Service and Single-Use Articles (repeated violation)
    Observation: Single service items were observed being stored directly behind the handwashing sink and unprotected from contamination.
    Correction: Store single service items in a location where they are not exposed to splash from the handsink or any other type of contamination.

Cover Healthy Food Handler info. with PIC. Reminder reheat to 165F and cool products 135F-70F in 2 hours and 69-41F within 4 hours. Sliced roast beef discarded. All PHFs from Maketable were placed into the walkin to cool. MakeTables were adjusted down.

    Observation: Sliced roast beef cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. PIC discarded during inspection.

    Observation: Single service items observed unprotected from contamination in storage.
    Correction: Store single service items in its original protective packaging or inverted in an approved dispenser. In storage keep trays wraped and protected.
