Log book consistently kept. Everything properly labelled.
  • Cooling, Heating, and Holding Capacities (corrected on site)
    Observation: Right make table cooler temperature registered at 43 degrees F. Unit was adjusted and temperature came down to under 41 degrees F by end of inspection. Food temperatures were recorded this morning upon being placed in make table, and all were well below 41 degrees F.
    Correction: Unit temperature needs to be maintained below 41 degrees F to ensure sure the food being held in it is also below 41 degrees F. Improper food storage temperatures are a major contributing factor to foodborne illness. Temperature log book has space for recording temperature of make tables - please utilize that space to verify that make tables are maintaining proper temperature.

PIC seemed knowledgeable. Observed good hand-washing practices. Temperatures of foods are taken twice daily (recommended using probe over infrared) - keep up the good work!

  • Critical: Food - Potentially Hazardous Food - Cold Holding* (repeated violation)
    Observation: PHF's in the sandwich prep unit were all out of temperature(49 degrees F or above) PHF's not maintained at proper refrigerated temperatures provide a substrate for pathogenic bacteria to proliferate causing possible food borne illnesses in the persons consuming the food.
    Correction: In a phone conversation with the manager she agreed to discard all PHF foods and place ice in the refrigeration unit and contact the corporate maintainence people to correct the problem with her refrigeration unit. Temperatures are to be monitored every 2 hours until the unit is repaired. CORRECTED DURING INSPECTION
  • Temperature - Food Temperature Measuring Devices - Provided
    Observation: The under counter refrigeration unit at the serving line and the True beverage refrigerator in the front of the facility do not have thermometers installed.
    Correction: Place accurately recording thermomrters in these to unys to assure that the refrigerationunits are maintaining temperatures of 40 degrees F or lower. Place thermometers in these units within 10 calendar days of this inspection.
