    Observation: A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands. OBSERVED FOOD EMPLOYEE WORK WITH DIRTY DISHES THEN FOOD WITHOUT WASHING HANDS AND CHANGING GLOVES.
    Correction: ALL food employees shall wash their hands OFTEN especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, BEFORE putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction of foodborne illness. FOOD EMPLOYEE WASHED HANDS AND CHANGED GLOVES. RECOMMEND PROVIDING HANDWASH TRAINING.

    Observation: The following food items were observed cold holding at improper temperatures using a calibrated food temperature measuring device: BUTTER AT 55F AND CREAM CHEESE AT 49F ON ICE.
    Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. MOVED FOOD TO COOLER AND DISCUSSED PLACEMENT OF FOOD ON ICE TO MAXIMIZE CONTACT WITH ICE FOR PROPER TEMPERATURE CONTROL.

    Observation: The following refrigerated, ready-to-eat, potentially hazardous food that is commercially processed is not used or discarded within 24 hours of when the original container was opened and is not observed to be date marked: SHREDDED CHEDDAR CHEESE IN 2DR TURE COOLER (R)
    Correction: Refrigerated, ready-to-eat, potentially hazardous commercially processed foods when opened and kept for more than 24 hours cannot have a shelf-life of more than 7 days, including the day of the original container was opened. These food items must be marked with either the "consume-by" date and/or "preparation" date, color-coded labels, or another marking system/method that effectively indicates shelf-life that is clearly understood and properly used by the employees. This date cannot exceed any manufacturer determined "use-by" date based on food safety. DATEMARK THE CHEDDAR CHEESE AND TRAIN STAFF ON DATEMARKING PACKAGES OF POTENTIALLY HAZARDOUS FOODS THAT ARE COMMERCIALLY PROCESSED.

The purpose of this visit was to conduct a follow-up on the Delfield 2dr cooler main. Cooler was observed at holding 41F and below and was able to keep potentially hazardous foods at 41F and below. Facility now in compliance.

    Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.

    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: yogurt 52F, salsa 51F in delfield 2dr cooler main
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. food employees removed all potentially hazardous foods from the delfield 2dr cooler main

    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: Delfield 2dr cooler main 44F
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly.

    Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees.
    Correction: Provide a sign or poster at all handwashing sinks used by food employees that reminds food employees to wash their hands.

    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. All items were discarded

    Observation: Observed the handsink next to the 3-vat sink is being used to hold trays.
    Correction: Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands.

    Observation: Employees are not properly sanitizing cleaned multiuse equipment and utensils when using the 3-vat sink
    Correction: The Person in Charge or certified food manager shall train his/her employees to properly sanitize all equipment, utensils, and surfaces after being cleaned using either an approved sanitizer at the adequate concentration or heat sanitization at the proper temperature to destroy pathogenic bacteria.

    Observation: The food temperature measuring device was found out of calibration in the range of use.
    Correction: Food thermometers shall be calibrated in accordance with manufacturer's specifications as necessary to ensure their accuracy. It is suggested that food thermometers be calibrated at least once a week in a cup completely filled with ice and cold water to a temperature of 32°F or calibrated in a pot of boiling water at 212°F.
  • Refuse Container with Cover/ Women's & Unisex Toilet Room (repeated violation)
    Observation: There is no cover to the feminine napkin refuse container in the ladies room stall.
    Correction: A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.
