The purpose of this visit is to conduct a routine inspection. There are no violations observed during this inspection. Discussed active managerial control with the manager in charge. Manager discussed the food safety systems used to prevent food borne illnesses. No violation noted during this evaluation.

Routine
The purpose of today's visit was to conduct a routine inspection. The high heat sanitizing dish machine is out of service and will possibly be replaced with new unit (same type). Please continue to monitor the 1DR undercounter cooler # 2.
Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device:------Milk in the 1DR undercounter cooler # 1 observed at 48F.
Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. MANAGER DISCARDED MILK.
Handwashing Sink / Accessible at All Times Observation: The handwashing sink in the back area was observed with both the hot and cold water turned off due to a known water leak in the plumbling under the sink.
Correction: A handwashing sink shall be maintained so that it is accessible at all times for employee use. NOTE: STORE MANAGER HAS PLACED SEVERAL CALLS FOR REPAIR OF THE HANDSINK WITHIN THE LAST 2 WEEKS. STORE IS WAITING ON REPAIR.

Routine
The purpose of this visit was to conduct a routine inspection. Quaternary ammonium sanitizer concentration in the 3 vat sink initial,final/wiping cloth bucket was 500,400 /300 ppm. Hobart LX30 dishmachine turned the thermolabel black.
Critical: Sanitizers, 21 CFR Criteria for Food Contact (corrected on site) Observation: The concentration of the quaternary ammonium solution was measured at 500 ppm. This concentration exceeds the approved limits for use with food-contact surfaces of equipment and utensils in a foodservice establishment.
Correction: Maintain the concentration of quaternary ammonium solution at 150-400 ppm. Verify concentration using the appropriate test kit. NOTE
