  • Sanitize Solution Used for Wiping Cloths Stored off Floor, Prevent Contamination of Food & Equipment (corrected on site)
    Observation: Wet wiping cloth buckets improperly stored.
    Correction: Wet wiping cloth buckets containing chemical sanitizing solutions shall not be stored on the floor. The wet towel buckets shall also be used in a manner that prevents contamination of food, equipment, utensils, linens, and single service items.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: whole milk (55'F), 2% milk (49'F), and half and half (44'F) in 2 Dr Reach-in cooler
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. ITEMS WERE REMOVED AND DISCARDED
  • Equipment / Good Repair / Operation
    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: 2 Dr Reach-in Cooler at 57'F.
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly.

    Observation: Unprotected plastic waste bags used to store miscellaneous refuse are stored unprotected from pests and rodents outside the establishment. 2 TRASH FILLED BAGS ON GROUND.
    Correction: Refuse receptacles not meeting the requirements specified under 5-501.13(A) such as receptacles that are not rodent resistant, unprotected plastic bags and paper bags, or baled units that contain materials with food residue may not be stored outside. ORAL INFORMATION PROVIDED.
  • Refuse / Cover Receptacles / Outdoors / Tight-Fitting Lids
    Observation: Outside refuse container was uncovered. ALL TRASH & RECYCLING CONTAINERS LIDS OPEN.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables shall be kept covered with tight fitting lids or doors if kept outside the food establishment. ORAL PROVIDED.
  • Refuse / Outdoor Containers /Capacity
    Observation: The quantity of refuse exceeded the storage capacity of the exterior storage enclosure. 2 BAGS OF TRASH ON THE GROUND AND TRASH BAGS IN RECYCLING CONTAINERS.
    Correction: An outside storage area and enclosure and receptacles shall be of sufficient capacity to hold refuse, recyclables, and returnables that accumulate. BREAK DOWN BOXES AND ACQUIRE MORE TRASH STORAGE CAPACITY (THERE ARE 2 TRASH CANS AND 4 RECYCLING CONTAINERS). POSTING STANDARD OPERATING PROCEDURES RECOMMENDED, ALONG WITH PERIODIC MONITORING.
