Today’s inspection was to conduct a routine inspection. Facility was observed very neat and orderly. Thermolabel on the heat sanitizing dish machine activated on first run. Sanitizer observed at acceptable limit. No violations observed.

03/19/2015Routine
This is a follow-up inspection to the routine inspection performed on August 5, 2014. Following issues were discussed and observed during this inspection:
1) Hot water at hand sink to be minimum 100F at all times of operation. Due to high water pressure for source water supply (attached to Giant), piping tends to be flooded with cold water, especially if mop sink faucet is kept open. In order to allow hot water to enter the piping and produce minimum 100F at both front and back hand sinks, mop sink faucet has be kept closed and run water for a few minutes. Hot water issue is not observed at 3-vat.
2) Quaternary ammonium sanitizer concentration at 3-vat should be between 150-400ppm for quat chemical facility is using. Manager and EHS tested various connection plugs that regulate amount of chemical is pulled by dispenser and observed one at 350ppm. EHS provided training on how to properly test quat sanitizer concentration.

EHS provided additional training and written instructions on:
-How to test quaternary ammonium sanitizer solution concentration
-How to manually fix quat sanitizer concentration
**EHS will perform a follow-up inspection on or about August 20, 2014 to observe correction of following:
-hand sink hot water at minimum 100F.
-quaternary sanitizer dispenser

  • Critical: Quaternary Ammonium Compound Sanitizer Solution Concentration per Use Directions (corrected on site) (repeated violation)
    Observation: When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution out of dispenser with a concentration of 100ppm total quaternary ammonium compound.
    Correction: The quaternary ammonium sanitizer used in this facility shall have a minimum concentration of at least 200 ppm OR a concentration between 150-400ppm based on the manufacturer's use directions and using the appropriate test kit. Swapped out with new sanitizer chemical bottle but still observed at 100ppm. Provided training and manually fixed the 3-vat sanitizer solution concentration.
  • Handwashing Sink / Mix Valve or Combination Faucet , Water at 100°F
    Observation: Water from the handwashing sinks in kitchen, front, and bathroom were measured at a temperature less than 100°F: 80F, 83F, 80F, respectively.
    Correction: A handwashing sink shall be equipped to provide water at a temperature of at least 100°F through a mixing valve or combination faucet.

    Observation: A food employee was observed drinking in an area other than designated break area while preparing/handling food or contacting clean food contact surfaces.
    Correction: Food employees may only eat, drink, or use tobacco in a designated area like a dining room or office area. Employees shall not eat, drink, or use tobacco in the kitchen areas especially while preparing food for customers.
  • Single Service for Customer Self-Service / Wrapped, Dispensed
    Observation: Unwrapped single-service items were provided at the consumer self-service counter: wooden and plastic stirrers
    Correction: Single-service items that are intended for food or lip contact (such as straws or coffee stirrers) shall be furnished for consumer self-service with the original individual wrapper intact or from an approved dispenser.
  • Cleaning Frequency for Physical Facilities
    Observation: Observed that the following is in need of cleaning: air vent in the kitchen.
    Correction: Clean the physical facilities at a frequency necessary to ensure the protection and safe preparation of food.

Inspection was in response to a complaint of insect infestation and unsanitary bathrooms. Inspection revealed that rest rooms were supplied, sanitary, and in good repair. No evidence of an insect infestation was observed. Complaint is not confirmed.
