Gravy temperature was 80 to 83 degrees after 2 hours. Gravy was discarded. Discussed proper cooling methods with manager, and the timeframe requirements for adequate cooling. A copy of the Regulations concerning cooling procedure and timeframes were provided to manager Teresa Turner.

    Observation: Breakfast gravy noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

Facility is in good shape. Dishwasher is being fixed today, they have been using single use trays.
Good temperature monitoring. Discussed the Hobart refrigerator behind the service line. This unit was slightly warm, but is the staging refrigerator and has been open a lot.
Discussed cleaning, facility is being kept clean but don't forget the tops of the tallest equipment.
Good handwashing and prevention of barehand contact observed. Dumpster appears repaired.

Nice, well managed facility. Excellent personal hygiene observed. All time/temperature logs maintained for food prep. Cold holding units and warewashing machine temperature logs maintained as well. Very good job. Noted the door seals to the Milk refr. are in need of replacement, this has been noted previously. Please have the seals corrected to milk refr. PRIOR to next inspection.

    Observation: The following equipment food-contact surfaces were observed soiled to sight and touch: Large Hobart slicer.
    Correction: Clean and sanitize these surfaces for food contact. Slicer broke down cleaned and sanitized.

    Correction: Replace the door gaskets on the milk refrigerator in accordance with the manufacturer's specifications.

    Observation: The door gaskets to the milk, water, and juice refrigerator (near the white freezer) are in poor repair. Also, the latch that holds the doors closed is not working at all.
    Correction: Replace the door gaskets and replace the door latch to the milk/water/juice refrigerator near the white freezer.

The gaskets for the Hobart unit have been purchased but not yet installed. The four door Hobart unit is now holding at proper temps, however. The handsink at the back of the kitchen has been fixed. Milk cooler has been worked on, and is holding at 40 degrees. The doors to both walk in refrigeration units are scheduled to be replaced.

    Observation: Hobart hot unit door gaskets have not been replaced. Both walk in refrigeration unit door gaskets not replaced. The gaskets on the milk refrigeration unit are in poor condition.
    Correction: Replace gaskets as needed. See comments below.

    Observation: Vent filters on the hood system are not being maintained in clean condition.
    Correction: Maintain hood system in a clean condition.

  • Equipment - Good Repair and Proper Adjustment
    Observation: 2. The 4 door Hobart is not capable of holding potentiallly hazardous foods at the proper required temperature of 41 degrees F. as evidenced by the temperature of the unit at the time of my inspection and the temperatures recorded on her daily temperature chart. Temperatures recorded this monty between April 8 and April 12th ranged from 49 to 54 degrees.
    Correction: 2. Currently the 4 door Hobart unit is being used to store puddings and salads for placement on the serving line as needed. So time is being used for safety of the foods. You do have plenty of alternate refrigeration for storing potentially hazardous foods prepared for service. Use the Hobart unit in the back right side of the kitchen for cold storage until the other unit is repaired and working satisfactorily.
  • Equipment - Good Repair and Proper Adjustment
    Observation: 1. The door gaskets to both walk in refrigerators, all 4 doors on the back line hobart refrigerators, and the lower door gasket on the Bev-Air milk refrigerator are in poor repair. The gaskets on the four door Hobart are in paricularly bad shape. Gaskets are in shreads. This could be easily contributing the unit's inability to hold at proper temperatures.
    Correction: 1. Replace the door gaskets in accordance with the manufacturer's specifications.
  • Plumbing System Maintained in Good Repair (repeated violation)
    Observation: The stainless steel handsink on the back wall of the kitchen is not working at all. This is a repeat violation from last year.
    Correction: Repair the handsink so it can be used. Conveniently located handsinks at different locations in the establishemnt encourage good handwashing practices.
  • Refuse - Maintaining Refuse Areas and Enclosures
    Observation: Trash and litter were observed adjacent to the refuse container outside the facility.
    Correction: The refuse container storage area and grounds adjacent to the container are to be maintained clean and sanitary.
  • Ventilation Systems - Cleaning Ventilation Systems - Nuisance and Discharge Prohibition
    Observation: Vent filters in the hood system are not being maintained in a clean condition.
    Correction: Maintain hood system vent filters in a clean condition.
  • Critical: Toxics - Common Name/working Containers of Toxics* (corrected on site)
    Observation: Working container of cleaning product isnot properly labeled.
    Correction: Working containers of toxic items are to be properly labeled with contents. Identification of these containers with the common name of the material helps prevent the dangerous misuse of the contents.

Gaskets on the walk-in are being replaced. The gaskets on the pass thru warmer and milk cooler also need to be replaced. The second handsink in the kitchen is still not in operation. This needs to be fixed before the next inspection around April.
Good handwashing and prevention of barehand contact. Discussed cooling of the hams and the importance of recording the temperature as you are cooling food. Discussed methods and they appear to be sufficient. A very well ran facility and is kept looking new.
