This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit. The following issues require attention: 1. The Person in Charge at the beginning of the inspection did not have a valid Northern Virginia Food Protection Manager's card. Another employee arrived during the visit who did have the card. Please ensure that additional staff obtain this card. The owner stated that they are in the process of getting additional staff this certified FPM card. Thank you 2. Please ensure that the handwashing sink in the back prep area is used for handwashing and not the three compartment sink. Please ensure that this sink is supplied with handsoap and towels at all times 3. Time/temperature control for safety foods (TCS foods) must be held cold at 41°F or below. Please monitor the 2 door True refrigerator in the back and if it continues to run above 41°F, please relocate all TCS foods to another unit. The following issues require long term correction: - The ceiling tiles, coving and floor tiles in the back are in need of repairs. As per the owner, they are planning to make these repairs within the next few weeks. Note: An updated employee health policy poster was provided to the establishment and its details were discussed. *Repeat Observations are Subject to Civil Penalty

This visit was made to conduct a change of ownership inspection. The following items require correction: 1. Replace damaged door gasket for the under counter refrigerator across from espresso machines 2. Replace damaged floor tiles in back prep room 3. Repair and secure damaged ceiling tiles and t-grids. Hot water supply requirements: Hand sinks: 3 Mop sink: 1 3-compartment: 16 x 16 x 14 Required Recovery Rate: 57 GPH Hot water heater make/model: State Select ES652DORT 210 Input: 9 Kw Recovery Rate of Unit: 46 GPH 19% insufficient Recommend issuance of health department permit.
