This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful during the visit. The following issues require attention:
1. The Person in Charge at the beginning of the inspection did not have a valid Northern Virginia Food Protection Manager's card. Another employee arrived during the visit who did have the card. Please ensure that additional staff obtain this card. The owner stated that they are in the process of getting additional staff this certified FPM card. Thank you
2. Please ensure that the handwashing sink in the back prep area is used for handwashing and not the three compartment sink. Please ensure that this sink is supplied with handsoap and towels at all times
3. Time/temperature control for safety foods (TCS foods) must be held cold at 41°F or below. Please monitor the 2 door True refrigerator in the back and if it continues to run above 41°F, please relocate all TCS foods to another unit.
The following issues require long term correction:
- The ceiling tiles, coving and floor tiles in the back are in need of repairs. As per the owner, they are planning to make these repairs within the next few weeks.
Note: An updated employee health policy poster was provided to the establishment and its details were discussed.

  • Critical: Certified Food Manager: Presence Required (corrected on site)
    Observation: Person in Charge did not have a Northern Virginia Certified Food Protection Manager card at the time of the visit. Another manager with a valid FPM card did arrive during the visit.
    Correction: Establishment shall be under the control of someone holding a valid Northern Virginia Certified Food Protection Manager card at all operating times. It is recommended that additional employees obtain the card. The owner stated that they are in the process of getting additional staff certified.
  • Wiping Cloths/Use Limitation/Wet Towel Storage
    Observation: A wet wiping cloth was observed wrapped around the steamer of the coffee machine.
    Correction: Cloths in use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer solution at a specified concentration.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were measured at improper temperatures: Quiche in True 2 door in back at 46°F delivered that morning and milk had surface temperature of 45°F
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below. Quiches were moved to the 1 door glass unit that was functioning better. Milk to be moved to Arctic air unit
  • Date Marking of RTE, PHF(TCS) Prepared On-Site, Stored at 41°F or less (corrected on site)
    Observation: Date marking was not observed on the following items: chick pea salad in the self serve display refrigerator and a container of vegetable soup in the back glass display refrigerator.
    Correction: Refrigerated, ready-to-eat, potentially hazardous foods (time/temperature control for safety food) that are held at 41°For below shall be clearly labeled and date marked with a "USE BY" not exceeding 7 total days. If the food is held for only 24 hours, no date marking is required. For example, if foods like leftover soups, chili, tuna salad, potato salad, pasta salad, etc. are prepared on November 1, 2015 they shall be date marked with a "use by" date not exceeding November 8, 2015.Person in Charge to add date marking to these items.
  • Wall / Ceiling Attachments / Fixtures / Cleanable
    Observation: The shelves used to store clean utenils and food equipment is made of wood and not smooth and easily cleanable .
    Correction: Attachments to walls and ceilings such as shelving and other attachments shall be easily cleanable.
  • Handwashing Cleanser, Available at Handwashing Facilities (corrected on site)
    Observation: Observed that handsoap was not available at the handsink in the back next to the mop sink.
    Correction: Provide hand soap at each hand sink to allow employees to properly wash their hands. Person in Charge provided hand soap.
  • Physical Facilities Good Repair
    Observation: Observed a number of areas in the back of the facility in need of repairs including: broken floor tiles in back prep area, broken ceiling tiles in back prep area and ceiling tiles in disrepair and missing in back dry storage area, and broken coving next to 3 compartment sink.
    Correction: Repair the physical facilities. Poor repair and maintenance compromises the functionality of the physical facilities.

This visit was made to conduct a change of ownership inspection. The following items require correction:
1. Replace damaged door gasket for the under counter refrigerator across from espresso machines
2. Replace damaged floor tiles in back prep room
3. Repair and secure damaged ceiling tiles and t-grids.
