The purpose of today's visit was to conduct a follow-up to verify that the Trauslen 2DR upright cooler is holding at 41F or below. EHS observed the unit and potentially hazardous food both holding well below 41F. EHS also received the photographs that the facility emailed on Friday, November 13 verifying that the unit was holding below 41F the same afternoon of the routine inspection.

The purpose of today's visit was to conduct a routine inspection. Please take a picture of the unit temperature of the Traulsen 2DR upright cooler after the repair of the cooler today and then send a picture text message or email to the EHS. A follow-up inspection will be conducted on or after Monday, November 16, 2015 to verify that the Traulsen 2DR upright cooler is still continuing to hold at 41F or below. EHS provided CFM with and discussed the following handouts: equipment monitoring temperature log, food temperature log, receiving temperature log, Food for Thought Newsletter titled "How Cold Is It" and active managerial control.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site)
    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device:--------American cheese at 48F, Milk at 45F, Cut watermelon (received packaged and cut) at 44-47F, Pasteurized liquid egg at 46F and Sliced Turkey at 46F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. PER CFM MOST OF THE ITEMS IN THE COOLER WERE RECEIVED EARLIER IN THE MORNING. ONE PHF RECEIVING TEMPERATURE WAS TAKEN BY FACILITY STAFF AT 41F FOR MILK. ALSO PER CFM THE UNIT WAS BEING FREQUENTLY OPENED DURING LUNCH PREPARATION. ALL PHF IN THE UNIT WAS MOVED TO FREEZER TO RAPIDLY CHILL.
  • Equipment / Good Repair / Operation
    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F:------------Traulsen 2DR upright cooler observed at 47F.
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. EHS RECOMMENDED THAT FACILITY CALL A REPAIR PERSON IMMEDIATELY AND MOVE ALL PHF OUT OF THE UNIT. CFM SHARED THAT THE OWNER WAS GOING TO ARRIVE SOON AND ATTEMPT TO ADJUST/REPAIR UNIT IN HOUSE AND IF OWNER UNABLE TO FIX THEN A THIRD PARTY SERVICE PERSON WOULD BE CONTACTED.
