Great job of keeping the food contact surfaces clean and sanitized, Also, great job of handwashing and keeping foods at the proper temperature. Try to keep flies at a minimum.
  • Utensils - In-Use - Between-Use Storage (corrected on site)
    Observation: Dispensing utensils improperly stored between uses. EHS observed scoop stored handle down, touching food (flour)
    Correction: Store in-use utensils or dispensing utensils in one of the following manners: 1) In the food with their handles above the top of the food and the container. 2) In food that is not potentially hazardous with their handles above the top of the food within containers or equipment that can be closed. 3) On a clean portion of the food preparation table or cooking equipment only if the in-use utensil and the food-contact surface of the food preparation table or cooking equipment are cleaned and sanitized every 4 hours. 4) In running water of sufficient velocity to flush particulates to the drain. 5) In a clean, protected location if the utensils are used only with a food that is not potentially hazardous. 6) In a container of water if the water is maintained at a temperature of at least 135°F.
  • Temperature Measuring Devices
    Observation: There was no temperature measuring device located in the reach-in refrigerator.
    Correction: Provide a temperature measuring device in all hot or cold holding equipment used to store potentially hazardous foods so that employees can routinely monitor the ambient air temperature.
  • Floors, Walls, and Ceilings - Cleanability
    Observation: Floor or floor covering in the dry storage area is not smooth and easily cleanable. EHS observed the floor in poor repair in the dry storage closet and the kitchen where ice machine is located.
    Correction: Repair or replace floor or floor covering to make it smooth and easily cleanable.
  • Light Bulbs Protective Shielding
    Observation: Light bulb at the 3 compartment sink not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.

Overall excellent sanitation. Observed good handwashing, good employee health knowledge and nurse present to see workers, sanitizing solution present at 200 ppm Cl, thin tipped thermometer present and staff understand use and calibration, good food temperatures, storage and labeling.
  • Equipment - Good Repair and Proper Adjustment
    Observation: Rusty bolts present on flap in ice machine.
    Correction: Replace
02/19/2015Routine
Overall excellent. Good handwashing good glove use, sanitizer in place at 200 ppm Cl and used, good employee health knowledge.
  • Thawing
    Observation: Turkey bologna thawing in standing water in the sink. Temperature checked at 43 F.
    Correction: Bologna packages wiped with sanitizing solution, and placed in refrigerator for cold holding. Training done regarding approved thawing methods.
  • Food Contact Surfaces - Cleanability*
    Observation: Both cutting boards present with scarring on both sides of boards making effective cleaning and sanitizing difficult or impossible.
    Correction: Replace or resurface boards so that boards have smooth, durable, cleanable surface.
10/15/2014Routine
Inspection done in conjunction with DOC representative for scheduled inspection done every 3 years. No food preparation viewed during the inspection, but the following noted:
-No handwashing after eating and before handling a pan (that will not be used for food). Hands washed, suggest review when to wash hands with all workers.
-Light cover broken. Replace
-Finish on cabinets has worn off. Refinish so cabinets will be smooth and cleanable.
*Containers of juice placed on steps before taking to serve. Discussed, ensure food containers are kept on clean, sanitized surfaces. For today, when containers are picked up, ensure bottoms are cleaned off with sanitizing solution and disposable cloths or change cloths.
Facility clean and well organized with good food temperatures, storage, and labeling. Reviewed employee health policy with staff. Sanitizer in place at 50 ppm Cl and used. Overall excellent.

No violation noted during this evaluation.

Overall excellent sanitation with good handwashing, good glove use, good food temperatures and overall good storage, clean well organized facility with sanitizer in place at 100 ppm Cl.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Staff food stored with facility food in reach in refrigerator. Risk very low as facility food consists of juice in covered containers.
    Correction: Staff food moved to bottom shelf below and separate from facility food during the inspection.
  • Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
    Observation: Dust build up on walk in refrigerator ceiling.
    Correction: Ensure ceiling is cleaned as soon as possible, and measures are taken to ensure food is not contaminated while cleaning, ie place food in water proof bags or containers during cleaning.

Overall excellent sanitation noted. Clean well organized kitchen with sanitizer in place at 100 ppm cl and used. Noted good handwashing for working in kitchen, no handling ready to eat foods seen, good labeling and overall good storage. New floor installed in food pantry, good can storage/sorting. Noted: Turkey in walk in refrigerator thawing, after just thawed checked at 39 F. Milk, stored directly under fan units checked at 42.5 stem temp. Suggest move milk from under fan unit, which can sometimes be a warm spot in unit, check temperature of milk with calibrated, sanitized food thermometer, after moved and in place 2-3 hours. Per staff WIR temperatures when opening for morning 38-39 F.
  • Critical: Food - Packaged and Unpackaged - Separation, Packaging, and Segregation* (corrected on site)
    Observation: Raw chicken (well wrapped in plastic wrap) stored above ready to eat juice in reach in refrigerator.
    Correction: Chicken moved to bottom shelf immediately. Ensure all raw meats, eggs, or unwashed fruits or vegetables are stored below ready to eat foods.
  • Light Bulbs Protective Shielding
    Observation: Light bulbs in the kitchen not shielded, coated, or otherwise shatter-resistant.
    Correction: Shield or replace light bulb with a coated or shatter-resistant bulb.
