Person in Charge (repeated violation) Observation: Employees are not properly trained in food safety as it relates to their assigned duties. Couple employees with expired food handler cards. Must update in 2 weeks
Correction: Train all employees in food safety as it relates to their assigned duties.
Mops - Drying Mops Observation: Mops not hung up to air dry. Observed stored on side of mop sink
Correction: Wet use maintenance items such as mops must be hung in a position that allows them to air dry so they are not allowed to grow contamination which can then be spread through the establishment at the next use.

Routine
Observed proper handwashing and gloves use during inspection. Watch the temps of food items on the prep units some were observed just above the required cold holding temperature. Either monitor temps or use time with a written procedure. Food handler cards are current. Health Policy is a part of orientation.
Person in Charge Observation: Employees are not inspecting the food receipt. Per Person in charge the deliveries of food are being dropped of after hours (drop key). The entrance of food in an establishment is your first defense in allowing contaminated, adulterated and spoiled foods into your establishment.
Correction: Have employees routinely inspect food as they are received to verify that they are from an approved source, they are delivered at the required temperatures and they are stored in a manner that prevents contamination during shipment or transport.
Equipment - Cutting Surfaces Observation: The cutting board(s) along the two prep areas are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.
