    Observation: The following cooked potentially hazardous foods are not being adequately cooled from 135°F to 70°F within 2 hours and to 41°F within a total of 6 hour: BRACIOLA COOKED OVER 10 HOURS AGO IN COOLING IN UNIT # 2 observed at 45°F.
    Correction: Potentially hazardous foods shall be cooled from 135°F to 70°F within 2 hours and to 41°F within a total of 6 hours to prevent the growth of harmful bacteria.Discarded. Provided training and literature.

    Observation: The following refrigeration unit is not operating properly and is unable to maintain cold food at or below 41°F: 2 door prep. unit # 4.
    Correction: Repair/adjust the unit so it is able to maintain foods at or below 41°F. Do not use the unit to store potentially hazardous foods while it is not operating properly. Do not store any potentially hazardous food in the refrigeration unit #3 until after it has been fixed. ONCE REPAIRED

09/29/2014Risk Factor
The purpose of today's visit was to investigate a complaint submitted to the Health Department on March 7, 2014 regarding the reuse of previously served bread, mold in cheese shakers and pre-sliced fruit at the bar, and cockroach infestation. Spoke with the person-in-charge who said previously served bread is discarded and not served to the next table. Fewer slices are served to prevent waste. Pre-sliced fruit at the bar did not have any visible mold and the container looked clean. The fruit are refreshed every other day if not sooner and the container is cleaned before being refilled. Cheese in the cheese shakers had evidence of mold. The person-in-charge had all the cheese shakers emptied and refilled with new cheese. Did not observe any live cockroaches at the time of the visit. Pest control is scheduled for regular service. Mold in the cheese shakers have been confirmed, but the other items of concern were not confirmed at the time of the inspection.

    Observation: The following raw and/or undercooked foods are provided on the menu, menu board, table tent or brochure without a reminder statement: (1) CAESAR SALAD (2) BISTECCA ALLA FIORENTINA ON THE LUNCH AND DINNER MENUS
    Correction: The Consumer Advisory shall include a reminder statement that includes asterisking (*) the animal-derived foods requiring disclosure to a footnote that states one of the following: 1) "Regarding the safety of these items, written information is available upon request", or 2) "Consuming raw or undercooked meats, seafood, shellfish, or eggs may increase your risk of foodborne illness", or 3) "Consuming raw or undercooked meats, seafood, shellfish, or eggs may increase your risk of foodborne illness, especially if you have certain medical conditions".
