Mobile unit operating at Southampton County Fair with excellent sanitation. Observed clean well organized facility with good handwashing, good food temperatures, sanitizer in place at 100 ppm Cl and used and good food knowledge.

Food thermometer was available and calibrated. Food handler cards need to be accomplished. Gloves available, Proper hair restraints are required. Food purchased from Sam's and Reinhart. No cold holding observed. All opening have no screens allowing pest to enter the facility. Proper cold/hot holding temps discussed as well as health policy.

    Observation: Employees are not properly trained in food safety as it relates to their assigned duties. Food handlers cards are not valid as required by City of Suffolk ordinance sec 49
    Correction: Train all employees in food safety as it relates to their assigned duties.
  • Hair Restraints - Effectiveness
    Observation: Employees observed working in the food service area without proper hair restraints.
    Correction: Ensure all employees wear hair restraints such as hats, hair coverings or nets, beard restraints, and clothing that covers body hair, that are designed and worn to effectively keep their hair from contacting exposed food, clean equipment, utensils and linens, and unwrapped single-service and single-use articles. This section does not apply to food employees such as counter staff who only serve beverages and wrapped or packaged foods, hostesses, and wait staff if they present a minimal risk of contaminating exposed food
  • Outer Openings - Protected
    Observation: Outer opening of the food establishment is not protected against entry of insects and rodents.
    Correction: Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces.

NOTES:
- During inspection, the mobile unit was being cleaned and all units were not operating. No food was present in mobile unit.
- Sanitizer test strips available and stem thermometers present in mobile unit.
- Mobile unit is currently without commissary. Discussed with owner/operator that a commissary agreement should be completed and reported to the SHD.
- The mobile unit does have the capability of constant supply of electricity.
- Owner/operator is without a current District Food Handler card.
- Discussed Employee Health with owner/operator.
