Noted during Routine inspection of Jerry's Subs: Jerry's Subs and Schoolhouse Grill share 3 basin sink and mop sink). Food for SchoolHouse Grill is being prepared in mop sink (peas drained in colander). DO NOT do food prep in MOP sink. Owner called to discuss adding prep sink for SchoolHouse grill and adding larger 3 basin sink to accommodate large stock pots. Also discussed adding faucet/hose bibb to aid in filling large stock pots.
Critical: Food - Safe and Unadulterated* (corrected on site) (repeated violation) Observation: Peas observed drained in mop sink next to dirty mop and under broom. Protect food from contamination. Do not use mop sink for food preparation.
Correction: Ensure food is safe and unadulterated. Item discarded.

Follow-up
Observed food prep for delivery to multiple schools for day. Observed delivery trucks loaded for a.m. delivery. Facility is outgrowing capacity. Plan to increase 3 basin sink size to accommodate large equipment plus add prep sink so staff does not use MOP sink for food prep.

Correction: Ensure food is safe and unadulterated. Do not use mop sink for food prep or storage. Food must be protected. (Item discarded during inspection).
Water Tank Protecting Inlet, Outlet, and Hose Fitting Observation: There is no protective equipment present for the water supply hose. Hose end is observed stored in handsink.
Correction: Obtain protective equipment for all components of the water distribution system to prevent contamination when the equipment is not in use. Store hose in clean manner.
Water Tank, Pump, and Hoses, Dedication Observation: Hose used to fill stock pots for food preparation is not a food grade hose dedicated to food uses.
Correction: Discontinue the use of black maintenance/cleaning hose. Provide and use only a dedicated food grade hose.

Routine
Hot hold unit by the front door set <120F-must be set to hold food temperatures 135F or hotter. Please turn on earlier and to higher setting (turned up at inspection).
Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking* (corrected on site) Observation: The ready-to-eat (RTE) commercially processed OPENED DELI MEATS in the refrigeration unit was not properly dated for disposition after opening.
Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria. CORRECTION INITIATED.
Critical: Time as a Public Health Control* Observation: REPEAT: Temperature log for food leaving facility to cater to schools are not being documented with time/temperature. Copy of log book indicated 5/1 and 5/4 were not completed.
Correction: Clearly label or otherwise mark the food with a 4-hour cook-serve or serve by time. CORRECT THIS TODAY GOING FORWARD.
