    Observation: The prepared ready-to-eat (RTE) salsa in the refrigeration unit is not properly dated for disposition.

If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

Discussed complaint with manager on duty. Certified food manager (CFM) was aware of the complaint on Saturday however it was for only hair in the food. Complainant did not mention roaches to the CFM. The complainant returned a half eaten bowl of pasta but the Manager was unable to see a hair in the food but refunded the cost of the meal. Sbarro's policy includes hats with the uniforms of the employees but does not require or provide hats or hair restraints for management. Discussed the regulation requirements of wearing a hair restraint during food preparation and service outlined in the state food regulations. Manager was not wearing a hair restraint during the inspection. Inspection of the facility did not reveal any evidence of roaches. The establishment employs Ecolab for pest management services and the last invoice indicated there was preventative treatment on 01/20/2015. Unable to validate complaint during the inspection.     Observation: Breaded chicken breast noted not being adequately cooled to prevent the growth of harmful bacteria.
    Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses.

Handouts were given to the manager on the big 5 reportable illnesses. The quat sanitizer concentration was good @ 200 mm. Train staff to always turn on the timers when pizzas are pulled from the oven. All food temperatures were within the acceptable range.
