Critical: Demonstration of Knowledge* Observation: The person in charge failed to state the required temperatures and holding times for the following conditions of potentially hazardous food: (1) Refrigerated storage, (2) Hot holding, (3) Cooling, and (4) Reheating.
Correction: Ensure the designated person in charge (PIC) is knowledgeable about foodborne disease prevention, Hazardous Analysis Critical Control Point principles and Regulation requirements. The PIC should be prepared to recognize conditions that may contribute to foodborne illness. The PIC must also recognize conditions that fail to comply with Regulation requirements and be authorized to take the appropriate preventive and corrective actions to ensure that the Regulations' objectives are fulfilled. Recommend that the person in charge should complete an approved food safety class. Please provided documentation of approved food safety class registration to the montgomery health department within 10 days.
Cloths - Wiping Cloths - Use Limitation (corrected on site) Observation: Wiping cloths improperly stored between use.
Correction: Ensure wet wiping cloths are stored in a chemical sanitizer at the proper concentration between use.
Critical: Reheating for Hot Holding* (corrected on site) Observation: The chili and BBQ was not reheated to a sufficient temperature and time to eliminate pathogenic bacteria.
Correction: Rapidly reheat food for hot holding to 165°F or above within 2 hours.
Sanitizing Solutions, Testing Devices Observation: There is no properly working test kit provided in the facility for monitoring the concentration of the chemical sanitizing solutions.
Correction: Obtain an ammonia test kit so that employees can accurately monitor the concentration of the sanitizing solutions and maintain them at a safe and effective level.
Physical Facilities in Good Repair Observation: Floor tile in the kitchen is cracked, missing an peeling from an apparent underlying moisture propblem.
Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities.

Routine
- Rust observed on shelves used to store utensils. -RTE ready to eat food must not be stored in the bathroom. -Cabinet doors must be cleanable and non-absorbent -Floor wall juncture missing beside the 3 compartment sink -Hole in the cabinet surface must be cleanable and non-absorbent. -Precooked chili may be served, prepared, held. Facility is not authorized to cook chili from scratch on-site without prior approval. No transportation of chili is permitted at this time. No violation noted during this evaluation.
