This is a follow-up inspection for cold holding being out of compliance: Sandwich make unit is now cold holding at proper temperatures. The motor was replaced.
Equipment - Cutting Surfaces (repeated violation) Observation: The cutting board along the sandwich prep unit isheavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Correction: Resurface or discard and replace the cutting boards to provide a food contact surface that is smooth, easily cleaned and sanitized.

Permit will be issued upon receiving permit renewal application and payment. Test strips need to be replaced. Call Sarah at 757-253-4289 once sandwich make unit is repaired. Correct all risk factor observations out of compliance within 10 days. Correct all GRP's within 90 days.
Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site) Observation: Deli meat (52°F), Cheese (52°F), Tomato (53°F) cold holding at improper temperatures in sandwich prep unit.
Correction: Foods were relocated to a refrigeration unit that is capable of maintaining food storage at 41°F or below. Sandwich prep unit is being repaired.
