This visit was made to conduct a routine food safety evaluation. The Person in Charge was very helpful and is doing a good job of ensuring food safety. The following issue requires attention: 1. Time/temperature control for safety foods (TCS foods) must be held cold at 41°F or below. The chick pea salad that was delivered for today's lunch was delivered with a temperature of 60°F. Person in Charge was cooling the salads down in the upright refrigerator. All salads will be served within 2 hours and any remaining salads are to be discarded. Please ensure that the temperature of all TCS foods, including salads that contain cut green leaf vegetables, tomatoes or other cooked vegetable (like chickpeas) are taken at the facility where they are prepared before being delivered. Salads that need to be kept cold should be sent in ice coolers or other suitable container to maintain them cold at 41°F or below. Please check with the main kitchen facility to determine when salads are prepared. Note: This facility does not prepare any food. All foods are delivered already prepared and are delivered hot and cold. Lunch is served on single use disposable plates and all pans and utensils are returned to the main kitchen in DC to be washed, rinsed and sanitized.Temperature logs are being kept well by the Person in Charge.
