    Observation: High temp ware washing machine did not turn thermo-label black after repeated attempts. The final rinse temperature gauge reached only 160F. The PIC/CFM was instructed to set up and use 3-compartment sink until the machine is repaired.
    Correction: Utensils and food-contact surfaces of equipment shall be sanitized before use after cleaning. Sanitization is accomplished after the warewashing steps of cleaning and rinsing so that utensils and food-contact surfaces are sanitized before coming in contact with food and before use.

    Observation: No soap at the back prep area hand washing sink (across from walk in refrigerators).

Grill prep refrigerator (right) was observed at 48F and appears to be not keeping foods at proper cold holding temperature (41F or less). A new refrigerator was ordered during inspection. The CFM informed that it will be delivered and installed on Tuesday, Sep. 16, 2014.
A follow-up visit will be made on or after Monday, September 22, 2014 to ensure foods in prep refrigerator are at proper cold holding temperature.

The facility was instructed to do the same as the other refrigerator. The dessert prep refrigerator is cold holding whipped cream at the improper temperature of 45 F. The facility was instructed to lower this refrigerator temperature. Milk at the bar in a plastic place holder in the ice bin was found cold holding at the improper temperature of 48 F. The container was sunken directly into the ice along with the bottles of wine.

Bacterial growth and/or toxin production can occur if potentially hazardous food (time/temperature control for safety food) remains in the temperature "Danger Zone" of 5ºC to 57ºC (41ºF to 135ºF) too long. Up to a point, the rate of growth increases with an increase in temperature within this zone. Beyond the upper limit of the optimal temperature range for a particular organism, the rate of growth decreases.     Correction: Each handwashing sink or group of 2 adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.
