Manager voluntarily discarded chicken nuggets affected by frozen condensate in walk-in freezer and took appropriate actions with previously opened non-date marked foods in walk-in cooler .
Observed very good temperature monitoring / temperature logs.
Chlorine sanitizer solution in wash rag bucket concentration within appropriate range, 50 to 100 ppm.
Dishwashing machine sanitizing effectively, >160 degree rinse cycle.
  • Critical: Date Marking - Ready-to-Eat - Potentially Hazardous Food - Date Marking*
    Observation: The ready-to-eat (RTE) commercially processed shredded cheeze and lettuce in the walk-in refrigeration unit was not properly dated for disposition after opening.
    Correction: Mark a "consume by" date on commercially processed RTE foods at the time the original container is opened. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
  • Sewage - Other Liquid Wastes and Rainwater
    Observation: A condensate drain line was dripping onto food products in the walk-in freezer. Observed frozen condensate on packaged chicken nuggets in walk-in freezer.
    Correction: Repair the condensate drain line to prevent incidental contact with foods. Recommended placing pan or bowl to collect condensate until repairs can be made.
