Observation: Inspector observed raw chicken tenders and scrapple not covered and protected from @BIOLOGICAL CROSS-CONTAMINATION@. Operator properly covered the raw chicken tenders and scrapple during inspection.
Correction: Prevent @BIOLOGICAL CROSS-CONTAMINATION@ by storing food in packages, covered containers, or wrappings.
- Equipment - Food Contact Surfaces, Nonfood Contact Surfaces, and Utensils
Observation: Observed accumulations of dust, dirt, food residue or other debris on the following nonfood-food contact surfaces: Inside of the Continental low boy refrigerator and door gaskets were observed with food residue build-up.
Correction: Maintain nonfood-contact surfaces of equipment clean.

Observation: The handwash station in the kitchen is being used for purposes other than washing hands. Inspector observed a bag of breading stored in the hand washing sink. Operator removed bag of breading and cleared the sink.
Correction: The handwash facility identified above is to be used for washing hands only

Observation: Food contact surfaces of the potato slicer used to prepare/store potentially hazardous food items were observed soiled with accumulations of food residues.
Correction: Clean food-contact surfaces of potato slicer no less than every 4 hours to prevent the growth microorganisms on those surfaces.

Observation: Soap was not provided at the hand washing lavatory in the kitchen.
Correction: Hand soap must be provided at all hand washing lavatories to encourage proper hand washing. Hand cleanser must always be present to aid in reducing microorganisms and particulate matter found on hands.

Observation: Food in the Continental Prepstation and the Masterbilt 2 Door SS Refrigerator were observed out of temperature.
Correction: Operator requested to voluntarily dispose of all foods that are out of temperature in these units. Only food that has been put in these units less than four hours may be kept and moved to a properly cooling refrigerating unit. Secondary thermometers are to be used to confirm cooling units are operating at proper temperatures.

Observation: The food contact equipment surface of the potato wedge slicer is observed soiled with accumulations of grime and debris.
Correction: Clean the food contact surface of the potato wedge slicer to prevent accumulations that may reduce heat transfer to adequately cook food and to prevent attract of insects when not in use.
