The purpose of today's visit was to conduct a risk based assessment. Observed good hand washing by food employees. Facility was clean and organized. Discussed with manager foods that are in the process of cooling should not be tightly covered.

| The purpose of today's visit was to conduct a risk factor assessment inspection. No critical violations observed. Observed facilty clean and organized. Some of the comments written by the last EHS during the June 2013 still apply regarding the hot hold cabinets. The inside ambient air temperature inside both cabinets was observed just above 135F at 138F and 145F, however the integral temperature was reading much higher/hotter for both units. Per manager, many pieces of equipment will be replaced next year. No violation noted during this evaluation. | 09/16/2013 | Risk Factor | |
| The purpose of today's visit was to conduct a routine inspection. Many pieces of equipment were observed not working or not working correctly and in need of repair. It is highly recommended that the hot holding cabinet (FWE cabinet) be replaced, as this a problem that was noted in September of 2012, and while the unit has been repaired multiple times, the temperature continues to be very low even when the unit is turned to the maximum temperature 190F. Otherwise, the ice cream freezer must be painted or replaced as a large amount of rust was observed inside, the ice machine was out of order and must be replaced so that the staff can reliably have ice to calibrate their thermometers and it is highly recommended that the 2-door Hobart that has been out of order for more than 2 years be removed from the premises.
