Observation: Employees are using an alternative manual warewashing method that has not been approved by the health department.
Correction: Discontinue use of this alternate warewashing method until it can be reviewed and approved by the regulatory authority. Dishes must go through seris sash, rinse, sanitize

Observation: The nonfood contact surface of the behind ice machine and grease storage (cardboard box) has accumulations of grime and debris.

The minimum allowable separation distance must be at least 2x the diameter of the water supply inlet and at least 1 inch.

Observation: A review of the menu with the foodservice operator indicates that there is no consumer advisory for the eggs and ground beef that may be served raw and/or undercooked
Correction: If an animal food such as beef, eggs, fish, lamb, milk, pork, poultry, or shellfish is served or sold raw or undercooked the permit holder shall inform consumers of the significantly increased risk of consuming such foods by way of a disclosure and reminder using brochures, deli case or menu advisories, label statements, table tents, placards, or other effective written means.
