Maintenance Supervisor asked if we could come and check to make sure he adjusted the water booster. Everything was working properly on the dishwasher.
No violation noted during this evaluation.
09/16/2013Follow-up
Cooling is now being used by the facility. I recommend the PIC use the blast freezer in the kitchen. They are going to start using it for cooling. The mechanical dishwasher is going to be used with the conditions: after the rinse, the trays are being submerged in chlorine solution for a minute until the hot water booster can be fixed or the machine is converted over to chemical sanitation.
  • Critical: Food - Potentially Hazardous Food - Cold Holding* (corrected on site)
    Observation: Beans cold holding at improper temperatures
    Correction: Relocate food to a refrigeration unit that is capable of maintaining food storage at 41°F or below. If item has been stored out of temperature for longer than 6 hours discard.
  • Warewashing Machines, Manufacturers' Operating Instructions
    Observation: The mechanical warewashing machine was not operating in accordance with the manufacturer's specifications.
    Correction: Operate the warewashing machine per affixed data plate specifications to ensure that equipment and utensils are properly cleaned and sanitized.
  • Warewashing - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures (corrected on site)
    Observation: The water temperature in the manifold servicing the high temperature ware wash machine was below the minimum allowable level of 165ºF for a stationary rack single temperature machine. The thermometer read 155.
    Correction: Immediately discontinue the use of the machine until it is operating in accordance with minimum requirements. Initiate manual wash, rinse, and sanitize method to properly clean and sanitize equipment and utensils.
