This visit was made to conduct a risk based assessment. The Person in Charge was very helpful and the food worker answered the questions on the employee health policy very well. Thank you for pro-actively maintaining your dishwashing machine. Please note the following issue:
1. Ensure that hot foods are maintained at 135°F or above while being held hot on the self serve line.
Note:
- Discussed providing a covered waste basket in the women's employee restrooms
- Provided an updated Employee Health Policy poster and discussed its changes

  • Critical: Hot Holding of Potentially Hazardous Food at 135°F or above (corrected on site)
    Observation: The following food item(s) were measured at improper temperatures: Observed that the turkey sausage on the hot self serve line was at 112°F.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above. Breakfast service was to end within approximately 15 minutes. Any leftovers will be discarded. Person in Charge informed me that hot food items are replenished multiple times durng breakfast service and are not kept out for 4 hours.

    Observation: Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils. (kitchen) Open drinking cups were discarded during the inspection.
    Observed employee eating in the kitchen.
    Correction: Food employees may have beverages in the kitchen areas as long as they are covered and consumed through a straw and stored in a manner that will prevent contamination to food, equipment, utensils, linens, and single service items.
    Employees may eat in the dining area.
  • Food Storage / Preventing Contamination
    Observation: Food stored on the floor and/or food stored less than 6 inches off the floor. (walk-in freezer)
    Correction: Food shall be protected from contamination by storing the food at least 6 inches off the floor on approved shelving units or dunnage racks. Milk crates, soda crates, or bread racks are not suitable for food storage.
  • Equipment / Good Repair / Components / Gaskets
    Observation: The plastic screw is missing inside the ice machine. The handle on the Victory reach-in refrigeratoris damaged.
    Correction: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications.
  • Lighting Intensity/ Food Prep Area / 50 foot candles
    Observation: Observed that inadequate lighting was provided in the food preparation areas.(exhaust hood)
    Correction: Increase the lighting to provide a minimum of 50 foot candles in all food preparation areas.

1. Hot and cold holding temperatures taken were noted to be correct.
2. The kitchen was clean and well organized.
3. Whilst manually controlling the dish machine, please ensure that you run the cycle for a sufficient length of time (Dish washer due to be repaired today)
