Owner called servicer during inspection to schedule hood cleaning. Owner stated tech coming out tonight to repair floor tiles. Owner was waiting for floor tiles to come in. Refrigeration is holding at proper temperatures. Product is holding at proper temperatures. Viewed food temperature chart posted at walk-ins. Informed staff to continue to monitor and record temps for refrigeration units.

    Observation: Hood system in need of cleaning.
    Correction: Alter or replace this equipment so that the filters can be easily removed for cleaning and replacement. Clean and sanitize hood system.
  • Physical Facilities in Good Repair
    Observation: Floor tiles cracked/broken near dishwasher and prep unit #2.
    Correction: Maintain physical facilities in good repair. Poor repair and maintenance compromises the functionality of the physical facilities. Repar damaged floor tiles.

Hood system cleaned by Dura Care Services. Viewed temperature logs posted on walk-in units. Temperature logs are current for September. Spoke with owner concerning 2014 Business license, continuing to monitor and record temperatures for prep units at cookline and maintaining copies of all staff food handler cards on file at facility.
No violation noted during this evaluation.

Owner/cfm to change container of sanitizer at dishwasher. Dura Care Services to reservice hood system in July. Temperature log posted at walk-in units for the month of June. Continue to monitor and record temp on log for all refrigeration units. Employees due to update food handler cards. Copy of 2014 food handler class schedule given to manager.

New dish machine installed by Auto Chlor. Temperature logs posted at walk-in units. Informed manager to continue to monitor and record temps daily. Refrigeration is holding at proper temperatures. Product checked is holding at proper temperatures. Spoke with manager concerning permit renewal. Informed manager to check for application, have application filled out and sent in with permit fee. Facility recommended for permit. Permit will be issued once application and fee is received and processed.

Spoke with manager concerning grease trap and maintaining cleanliness of grease trap. Viewed staff food handler cards. Manager adjusted temperature gauge on prep unit #1 for unit to hold properly at required temp of 41 degrees and below. Spoke with manager concerning the usage of ice being properly packaged when storing on a food product. Spoke with manager concerning prep unit #1 temp. Informed by manager that he will call to have unit serviced. Spoke with manager concerning ceiling tiles in kitchen. Informed manager that landlord will be contacted concerning roof. Informed manager that I will stop by on Wednesday, 4-17-13.

    Observation: Unwrapped or uncovered food in the Prep unit#2 and walk-in cooler.
    Correction: Protect food from cross contamination by storing food in packages, covered containers, or wrappings.
  • Critical: Date Marking - Ready-to-Eat; Potentially Hazardous Food; Date Marking* (repeated violation)
    Observation: The prepared ready-to-eat food in the freezer is not properly dated for disposition.
    Correction: Mark a 24 hour ""consume by"" date once the food is thawed. Prior to freezing Indicate the length of time the food was held refrigerated which is 7 days or less at 41°F. When the food is removed from the freezer indicate the date by which the food shall be consumed which is 7 days or less at 41°F minus the refrigeration time before the food was frozen.

    Observation: The prepared ready-to-eat (RTE) food in the refrigeration unit is not properly dated for disposition.
    Correction: Mark the name and ""consume by"" date on the container of RTE foods at the time of preparation if the food is to be held for more than 24 hours. If the food is held at 41°F or below the food shall be served or sold within 7 calendar days. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.

    Observation: Plastic utensils were observed not facing same direction in storage container.
