The purpose of today's visit was to conduct a routine assessment. Please be advised to heat food at satellite location to 135F or above before placing in hot holding cabinets. Suggestions made to heat items well above 135F to ensure proper hot holding temperatures are maintained throughout delivery. Certified Food Manager (CFM) stated that he does not record receiving temperatures of food items. Provided training on importance of taking receiving temperatures of both hot and cold held items to prevent growth of bacteria on potentially hazardous foods.
