| The purpose of this visit is to conduct a routine inspection. The 2014 permit is still posted on wall. Call to the health department showed that the facility has paid, but the permit has not yet reached the owner in the mail. Post the current 2015 immediately when it arrives. | Facility uses ROP bag sealing packaging for queso sauces, ground beef, leftover salsas and guacamole sauces. Food items are taken from WIC refrigeration unit cold holding at proper temperature, sealed in bag, and transferred to Xtream Steamer Thermolizer unit for reheating to 165F. Observed process during inspection and observed proper datemarking for bags, and temperature recording. Per CFM, temperatures are recorded after reheated in Thermolizer and recorded in log book before placed in serving line. Bags are kept for no more than 2days in WIC. Copies of Written Procedures provided, attached on file. PLEASE ALSO RECORD TEMPERATURES OF FOOD ITEMS BEFORE BEING RE-BAGGED AND SEALED FROM WALK IN COOLER TO CONFIRM FOOD ITEM IS AT LEAST 41F OR BELOW BEFORE SEALING. CFM very knowledgeable about food safety, Thank you.
