This is an inspection to follow up with the cleaning and sanitation of the soda and ice dispenser unit. The equipment was cleaned up and proper procedures in place. The PIC provided the new developed cleaning and sanitation log / record keeping. Handwashing signs were posted at all handwashing sink stations. Food permit expired on April 30, 2013, the PIC was instructed to follow up with the facility's owner. This is also an inspection to investigate a complaint regarding the drinks dispenser cleaning and sanitation. The proper cleaning and sanitation procedure was discussed with the PIC. She was instructed to develop a cleaning daily logging record, since this is the second complaint received. The proper methods for cooling of temperature control for safety food were explained and demonstrated to the PIC and other food workers.

Observation: The methods used for cooling were not adequate.
Correction: Cool foods by the following methods: 1. Placing food in shallow pans 2. Separating food into smaller thinner portions 3. Using rapid chill cooling equipment 4. Stirring the food in a container placed in an ice water bath 5. Using containers that facilitate heat transfer 6. Adding ice as an ingredient 7. Any other method that can effectively accomplish cooling.

Observation: Surfaces of the soda drinces ice dispenserwas in contact with non-potentially hazardous food items that were observed soiled with accumulations of grime and debris.
Correction: Clean the surface of soda drinks and ice dispenser at any time when contamination may have occurred, at least every 24 hours, before restocking the consumer self-service equipment/utensils, or per manufacturer specifications.
