    Observation: Observed a residue on the inside door area of the small freezer on the cook line. Also, observed a residue dripping down the front of the hot holding unit.
    Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
