1. Discussed the need for proper hair restraints for all food handlers in the kitchen.
2. Be very cautious of overstocking the refrigerator. There is a difference of 9 degrees between the top and bottom shelf of the unit since it is way overstocked. Good air flow is a must for refrigeration to operate properly. Also, when staff are constantly in/out of refrigerators they have to work even harder to maintain proper temperatures.
3. Provided information regarding the difference between use by/sell by/best by dates.
4. Employee health policy is posted in kitchen area.

    Observation: A food employee was observed cleaning their hands in a sink used for utensil washing.
    Correction: Instruct food employees to clean their hands in a handwashing lavatory. Food employees may not clean their hands in a sink used for food preparation or utensil washing.
  • Handwashing Lavatory, Water Temperature, and Flow
    Observation: Water from the handwashing sinks in the kitchen and the employee rest-rooms were measured at a temperature less than 100°F.
    Correction: Make necessary adjustments to valves and lines serving the handsink to provide water of at least 100°F to allow more effective removal of fatty soils encountered in kitchens.

  • Equipment - Good Repair and Proper Adjustment
    Observation: The can opener blade is damaged & causing metal fragment when opening cans.
    Correction: Disassemble the can opener, clean and sanitize the assembly, remove and rotate the blade. Can opener blades must be kept sharp to prevent creation of metal fragments that can contaminate food in the can when opened.

  • Critical: Ready-to-Eat - Potentially Hazardous Food - Disposition* (corrected on site)
    Observation: The commercially processed ready-to-eat (RTE) cheese sauce in the refrigeration unit was not discarded by the ""consume by"" date. Food stored for 21 days.
    Correction: Discard the food at this time and ensure all commercially processed RTE food is served, sold or discarded by the ""consume by"" date after opening. Some harmful bacteria continue to grow even at refrigeration temperatures so limiting the amount of time in storage limits the amount of growth allowed for these bacteria.
