Cured bacon. Pork belly held in a mixture for 7 days. On the 7th day it is dried out in the cooler and smoked that day. Cooked in cooler for 6 hours. Move thermometers in sandwich unit so they are visible not in back of refrigerator. Provide a list of all suppliers.
