Today a ROUTINE INSPECTION was conducted at your facility.
This inspection was done in conjunction with a Risk Factor Survey as part of FDA Retail Standard 9.
Thank you for accompanying me during this visit as your participation allows me to assess items and processes at your facility that may require further clarification.
At this inspection it was observed that Staff are knowledgeable about Employee Health Policy guidelines, hand washing and glove use.

  • Critical: Hot Holding of Potentially Hazardous Foods at 135°F or More (corrected on site)
    Observation: The following food items were found hot holding at improper temperatures using a calibrated food temperature measuring device: OBSERVED SWEET POTATO FRIES HOLDING AT 114 F, 119 F AND 122 F IN THE FWE HOT HOLD. TEMPERATURE OF FWE HOT HOLD WAS OBSERVED AT 145 F
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be hot held at a temperature of 135°F or above unless the permit holder is using "time as public health control" as specified under 3-501.19. FRIES WERE REHEATED TO 180 F IN THE BLODGETT OVEN.
  • Equipment / Good Repair / Components / Gaskets
    Observation: The INSIDE TOP SURFACE ( CEILING) OF THE UPRIGHT WHITE FREEZER IS HEAVILY RUSTED AND COMPELTELY PEELING AND NEEDS TO BE REPAIRED/PAINTED. PEELING PAINT ALSO HAS THE POSSIBILITY OF CONTAMINATING FOOD STORED INSIDE THE REFRIGERATOR.
    Correction: Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. DISCUSSED WITH MANAGER TO REPAIR/RESURFACE THE UNIT IN 30 DAYS.

  • Critical: Quaternary Ammonium Compound Sanitizer Solution Concentration per Use Directions (corrected on site)
    Observation: When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils.Observed the sanitizing solution in the 3 compartment sink with a concentration of 400.0 ppm total quaternary ammonium compound. Also, the rinsing tub of 3 comp. sink had items soaking in it.
    Correction: The quaternary ammonium sanitizer used in this facility shall have a minimum concentration of at least 200 ppm OR a concentration between 150-400ppm based on the manufacturer's use directions and using the appropriate test kit. CLEAR WRITTEN INSTRUCTIONS ON WALL IS RECOMMENDED, INCLUDING AT WATER LEVELS COMMONLY USED. THE RINSING TUB PORTION OF 3 COMPARTMENT SINK IS FOR WATER FLUSHING SOAP OFF AND NOT FOR SOAKING SOAP OFF, IT SHOULD REMAIN EMPTY OF WATER.
