The purpose of today's visit was to conduct a routine assessment in conjunction to a complaint investigation dated 1/5/2016. Please continue the following practices as a means to incorporate Active Managerial Control:
1. Proper monitoring of reheating practices to ensure that commercially cooked products are reheated to 135F or above
2. Keeping thorough Time as a Public Health Control (TPHC) records for items being held under heat lamps near service line
3. Training employees on corrective actions when improper cooling or reheating occurs.

The purpose of today's visit was to conduct a risk factor assessment. Please continue the following practices as a means to incorporate Active Managerial Control:
1. Monitoring Time as a Public Health Control (TPHC) logs with included corrective actions
2. Training employees on Employee Health Policy regularly
3. Conducting walk-throughs during shifts to observe employee food handling practices

Continue using Active Managerial Control (AMC) to monitor Time as A Public Health records for items being held under heat lamps located at front service area. Suggested using metal pans, rather than plastic pans, to cool food while submerged in ice bath.

    Correction: Cooling hot foods shall be accomplished as follows: 1) placing the food in shallow pans

    Correction: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue and other debris to maintain a sanitary work environment and prevent pest attraction.

    Correction: Potentially hazardous foods shall be cooled from 135°F to 70°F within 2 hours to prevent the growth of harmful bacteria. --CFM DISCARDED RED RICE. EHS PROVIDED TRAINING TO CFM ON PROPER COOLING METHODS
  • Handwashing Sink / Used for Hand Wash Only (corrected on site)
    Observation: Observed the handsink at the BACK BY FRYER being used TO STORE TONGS.
    Correction: Handsinks are to be used only for washing hands to encourage proper hand washing and to prevent contamination of cleaned hands.
  • Handwashing Signage at Handwashing Facilities Required (corrected on site) (repeated violation)
    Observation: Observed that sign or poster that notifies food employees to wash their hands is not provided at all handwashing sinks used by food employees. --HANDWASHING SIGN MISSING AT BACK HANDSINK NEAR FRYERS.
    Correction: Provide a sign or poster at all handwashing sinks used by food employees that reminds food employees to wash their hands.--EHS PROVIDED SIGN
