    Observation: Employees were observed donning gloves without first washing hands. CFM pressed trash into a can and proceeded to handle equipment (fryer).
    Correction: ALL food employees shall wash their hands OFTEN especially after handling trash, using the restroom, handling raw meats, handling soiled equipment and utensils, BEFORE putting on clean gloves, etc. Proper handwashing frequencies will aid in the reduction of foodborne illness. EHS provided reminders to CFM and employees about when, where, and how to wash hands, and a handout about hand washing in Korean. Hands were properly washed after each reminder from the EHS.

    Correction: ALL food employees shall wash their hands in ONLY a designated handsink. EHS provided reminders. Employees moved to wash hands in handsink.

    Observation: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter, or in a bucket with insuffcient sanitizer.
    Correction: Wet wiping cloths are to be used for wiping counters and other equipment surfaces and are to be held in a chemical sanitizer solution at the appropriate concentration between uses.
  • Critical: Cold Holding of Potentially Hazardous Food at 41°F or less (corrected on site) (repeated violation)
    Observation: Kimchi, cut cantaloupe, and cheeses observed holding at 45 F in the walk-in/vending refrigerator.
    Correction: Potentially hazardous foods in cold-holding must be 41 F or colder at all times. Walk-in refrigerator in this facility has several doors for customer self-service. CFM indicated the doors were frequently opened during breakfast service. Ambient air temperature in the unit was observed at 40 F, and was adjusted during the inspection to maintain 38 F (later measured and veified). Adjust the unit as needed to ensure foods inside are ALWAYS 41 F or colder.
  • Modifications to FDA Food Code/Section 4-205.10, Equipment Certification
    Observation: The microwave in use is intended for household use only and is not approved for use in a commercial food establishment.
    Correction: Food equipment that is certified or classified for sanitation by an American National Standards Institute (ANSI) accredited certification program will be deemed to comply with Parts 4-1 and 4-2 of this chapter. Food equipment in a food establishment shall be certified of classified by an ANSI-accredited certification program, an equivalent certification program, or approved by the Regulatory Authority before installation and/or use.

The purpose of today's visit was to conduct a risk factor assessment inspection. Per CFM/owner the smoked salmon is cooked well done to 145F for 15 seconds before serving.

    Observation: Open drinking containers stored in a manner that may contaminate food, food contact surfaces or utensils.-------------Observed open cup of coffee being stored directly next to unpackaged single use syrofoam take out containers.
    Correction: Food employees may have beverages in the kitchen areas as long as they are covered and consumed through a straw and stored in a manner that will prevent contamination to food, equipment, utensils, linens, and single service items. CUP RELOCATED OUT OF FOOD PREP AREA.

    Observation: The following food item(s) were observed cold holding at improper temperatures using a calibrated food temperature measuring device: Milk (44 F) in two door upright display refrigerator, house-made cole-slaw (48 F), pasta salad (49 F) in walk-in refrigerator.
    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. MILK WAS RELOCATED TO WALK-IN REFRIGERATOR. COLE SLAW AND PASTA SALAD DISCARDED.

A THERMOMETER FROM A UNIT WITH MULTIPLE THERMOMETERS WAS RELOCATED TO THE DEFCIENT UNIT.

    Observation: Upon discussion with the person-in-charge, one or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment. At the time of this inspection, the Health Department provided and reviewed handouts and resource information in a red folder labeled "Employee Health Policy.
    Correction: A complete employee health policy must have the following elements:
    1) Employee training on foodborne illness, particularly symptoms of illness and prevention of the Big Five illnesses (see "What is Foodborne Illness" handout)

    Observation: When tested, the chlorine-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the three vat sink with a concentration of 0 ppm total chlorine.
    Correction: A chlorine-based sanitizing solution shall have a minimum concentration of at least 50 to100 ppm total chlorine when tested using the appropriate test kit.
