This section does not apply to food employees such as counter staff who ONLY serve beverages and wrapped or packaged foods, hostesses, and wait staff.
  • Food Protection from Contamination / Package, Cover, Wrap (corrected on site)
    Observation: Unwrapped or uncovered food in the following location where the food is subject to contamination: walk-in refrigerator and spies in the prep area. Foods were discarded or covered.

    Correction: Potentially hazardous foods (time/temperature control for safety food) that is cooked, cooled, and reheated for hot holding shall be reheated to a minimum temperature of 165°F for 15 seconds.

    Observation: Observed improper methods used to thaw squid in standing water. The squid was placed under cold running water.

    Observation: The following food item(s) were measured at improper temperatures: the eggs, the egg wash, the ham, the chicken strips, meatballs, and sausage. Food were discarded during the inspection.

    Observation: The following mechanical refrigeration unit is not currently operating as required to cold hold food at a temperature of 41°F or less: pizza prep cooler. Repair immediately.
    Correction: Refrigerators shall be capable of holding foods at a temperature of 41°F or below. Repair the unit(s) immediately. Foods exposed to temperature abuse for over 2 hours shall be discarded, otherwise, the foods shall be stored in properly operating refrigerators.

    Observation: The following equipment/utensils were observed soiled to sight and touch: prep tables knives, pizza cutter and interior of the reach-in refirigerators. the entire kitchen needs a deep cleaning.
    Correction: Equipment food-contact surfaces and utensils shall be clean to the sight and touch. A surface that is soiled cannot be effectively sanitized.

    Observation: The toilet room door is not tight fitting and/or provided with a self- closing door.
    Correction: Provide a toilet room door that is tight fitting and self-closing. Completely enclosed toilet facilities minimize the potential for the spread of disease by the movement of flies and other insects between the toilet facility and food preparation area.

This visit was made to conduct a follow-up inspection. The sandwich unit has been fixed and ambient temperature is noted above. Food temperatures in this unit are good as noted above. The pizza prep unit is still pending repair and there is currently no food stored in this unit. The facility is waiting on a new compressor and new gaskets for the pizza unit.
- New CFM card for Abraham Perez is still pending. Fax copy of card to main office (703) 746-4919 when obtained.

    Correction: Raw foods like poultry, beef, pork, seafood, and eggs shall be stored properly inside refrigerators and freezers to prevent cross contamination. Raw foods shall be stored on shelving units BELOW or SEPARATED from all cooked foods, commercially processed foods, washed produce, leftover foods, etc.

    Observation: Observed raw shell eggs stored at room temperature @ 75F. (discarded)
    Correction: Shell eggs that have not been treated to destroy Salmonella shall be stored in refrigerated equipment that maintains an ambient temperature of 45°F or less.
