PIC was very responsive to questions regarding Risk Control response to a recent cooling equipment failure, employee illness and restriction practices, and safe food handling practices. All TCS food temperatures were within spec, employee hygiene, handwashing, hair restraints, hand hygiene was observed to be very good. Good date labelling. Observation: The nonfood contact surface of the interior of door of walk in cooler, is badly damages is no longer easily cleanable.
Correction: Alter or replace this item to provide a surface that is free of unnecessary projections, and crevices.

Notes: Walk in cooler was keeping items right at 40-41 degrees. Suggest turning it down a couple of degrees to be able to maintain internal temperature of foods stored there at 41 or lower even during peak use times or deliveries.

Observation: The nonfood contact surface of the grease trap, chemical sanitizing dish machine, and floor/pipes under the dish washing area has accumulations of grime and debris.
Correction: Clean the surface at a frequency necessary to preclude accumulation of soil residues that become encrusted or attract insects and rodents.
