Staff corrected chlorine sanitizer concentration in 3 compartment sink. Thank you. Metal stemmed thermometers are placed throughout salad bar and prep cooler trays to monitor food temps.
  • Critical: Warewashing - Manual & Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration & Hardness* (corrected on site)
    Observation: Chlorine sanitizing solution used was not at an acceptable concentration. 3- compartment sink sanitzing solution was measured below recommended level.
    Correction: Adjust the chlorine sanitizing solution to a level of at least 50 parts per million when the pH is at 8 or less and the water temperature is 75°F.

Staff noted that the Victory cooler was already pulled from service until repair is made. Discussed sanitizing solution with staff.
  • Equipment and Utensils - Good Repair and Calibration
    Observation: Upright Victory Cooler was observed in a state of repair and condition preventing the equipment to be used as designed.Door gaskets appear to be loose preventing a proper seal which maintains temperature. Currently, the cooler is not being used for food storage.
    Correction: Repair/replace door gaskets to provide proper operation and cooling temperature of cooler.
  • Critical: Equipment and Utensils - Hot Water and Chemical Sanitizing* (corrected on site)
    Observation: When tested, a low concentration of chemical sanitizer was found in the sanitize basin. Chlorine solution was tested at 50 PPM.
    Correction: Provide chlorine sanitizer at proper concentration of 100 PPM and immerse or expose food contact surfaces to sanitizing solution for adequate time.

Individual thermometers are located in pizza topping bins in Prep Bar units. New light fixtures noted in walk-in cooler and rear kitchen. New carpeting noted in dining room. Gloves were noted as being properly worn during pizza preparation.

    Observation: Observed accumulations of mildew on the following nonfood-food contact surfaces: plastic shields located in the interior of ice machine.
    Correction: Maintain nonfood-contact surfaces of equipment clean.

Staff was in process of weekly cleaning of dining room area during low dining activity. Pre-cooked foods (boiled eggs and pasta) appear to be cooled and stored in small portions for rapid cooling in refrigeration units.
