CFM has agreed to use TIME AS PUBLIC HEALTH CONTROL for busy lunch and dinner hours and will keep beansprouts and rice noodles out for a maximum of 4 hours to be discarded once time limit is met.

EHS provided additional Handwashing signs, Employee Health Policy in Vietnamese and Spanish, Cooling Methods, Hot and Cold Holding, and Dishwashing information in Spanish and Vietnamese.

    Correction: Potentially hazardous foods (time/temperature conrol for safety food) shall be held cold at a temperature of 41°F or below. FOOD ITEMS PLACED IN WIC. FOOD ITEMS WILL USE TIME AS PUBLIC HEALTH CONTROL DURING LUNCH HOURS THEN DISCARDED AFTER 3 HOURS.

    Observation: The food-contact surfaces of the following equipment were not observed sanitized: METAL POT. OBSERVED SERVER WASH METAL POT IN 3VAT SINK WITH ONLY SOAP AND WATER.
    Correction: All utensils and food-contact surfaces of equipment shall be sanitized before use and after cleaning. EHS EXPLAINED PROPER PROCEDURES, ITEM PLACED IN DISHMACHINE FOR CLEANING.
