| This is an inspection to observe, evaluate and approve a beef gyro preparation procedures using a gyro machine. In addition to assist the operator with a risk control plan for a partially cooked beef gyro cooling procedure. The procedure was approved. The operator will comply with risk control plan. Provide soap/dispenser, paper towels/dispenser and handwashing signs at all handwashing sinks 3. Repair the dishwasher machine 4. Provide sanitizer (chlorine) test strip to monitor sanitizer concentration 5. Provide an air gap for the the pre-wash spray hose 6.
