Proper cooling methods were discussed. Reviewed when to wash hands such as before donning gloves, after eating, after smoking, or anytime hands become contaminated. Good hot holding temperature. Great active managerial control. New walk-in cooler was organized, cleaned, & well lit. Nice job on the dining/bar area remodel.
