The purpose of today's visit was to conduct a routine assessment. Improper cold holding was observed. Suggestions made to refrigerate items like tomatoes and canned olives to facilitate cooling prior to placing in cold holding wells. Also suggested placing sliced tomatoes in walk-in cooler immediately after preparation to cool to 41F before being placed on serving line. Discussed active managerial control (AMC). Suggested the use of cooling logs for items held at ambient air temperature prior to cold holding as away to incorporate AMC.

| Complaint states:There was a worm hanging from a piece of pizza. About half an inch long in the colors orange and brown, blended into the crust. EHS discussed complaint with CFM. EHS asked if establishment experiencing an issue with worms, CFM stated no. EHS asked to see copy of latest pest control invoice. Latest invoice dated 12/10/13 with Western Pest Services. Invoice states no pest concerns during this service. EHS did not observe any pest activity during time of investigation. No violation noted during this evaluation. | 12/18/2013 | Complaint | |
| Complainant reports no air conditioning in the establishment. EHS spoke with CFM about the complaint. Air conditioning was working properly during time of inspection. CFM stated that air conditioning was under repair most of last week. CFM stated they would have air conditioning for a couple days and then go out again.
