Please remember that a Certified Food Manager MUST be present during ALL HOURS OF OPERATION or risk closure. To ensure that a Certified Food Manager is present, it is advised that additional food employees attain a Certified Food manager's Card.
EHS provided additional handouts on proper Cooking, Dishwashing, and Employee Health Policy in Korean.

    Observation: The certified food manager could not provide a food temperature measuring device.
    Correction: A metal-stemmed probe food thermometer shall be provided and readily accessible for use in ensuring attainment and maintenance of food temperatures.

    Correction: It shall be unlawful to operate a food establishment unless it is under the immediate control of a certified food manager. It is highly suggested that you have more than one employee with the food manager's license. ORS Interactive, Inc. (see handout provided) issues the required photo identification card with proof of successful completion of a certified food manager's exam. Failure to have a certified food manager on site during ALL hours of operation including food preparation, food service, and cleaning/sanitizing of equipment/utensils will result in closure of the establishment.     Correction: The person in charge failed to explain the correct procedures for cleaning and sanitizing utensils and food-contact surfaces of equipment. OBSERVED 3VAT SINK SET UP WITH SOAP AND CHLORINE SANITIZIER TOGETHER.
  • Critical: Molluscan Shellstock/Maintaining ID/Tags Retained for 90 Days from Dates Last Sold or Served
    Observation: The tags for the molluscan shellfish are not being retained for 90 days. PER CFM, MUSSLES ARE BOUGHT FRESH AND NO SHELLSTOCK TAGS OBSERVED AT FACILITY. SHELLSTOCK TAGS ARE NOT BEING RETAINED.
    Correction: The identity of the source of shellstock (oysters, clams, mussels) that are sold or served shall be maintained by retaining shellstock tags or labels for 90 calendar days from the date when the last shellstock from the container is sold or served using one of the following methods: 1) an approved record keeping system that keeps the tags or labels in chronological order correlated to the date when the last shellstock from a container are sold or served, 2) preserving source identification by using a record keeping system, and 3) ensuring that shellstock from one tagged or labeled container are not commingled with shellstock from another container with different certification numbers, different harvest dates, or different growing areas as identified on the tag or label before being ordered by the consumer. EHS EXPLAINED PROPER SHELLSTOCK KEEPING PROCEDURES.
  • Clean Ice Bins, Beverage Dispenser Nozzles, Etc. per Manufacturer Specs.
    Observation: Surfaces of ice bins, beverage dispensing nozzles, and enclosed components of equipment are not being cleaned as required. ICE TRAY IS STAINED AND IN NEED OF CLEANING/REPLACEMENT.
    Correction: Surfaces of utensils and equipment contacting food that is NOT potentially hazardous (time/temperature control for safety food) such as ice bins, beverage dispensing nozzles, and enclosed components of equipment such as ice makers, cooking oil storage tanks and distribution lines, beverage and syrup dispensing lines or tubes, coffee bean grinders, and water vending equipment at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold.

Sanitize all dishware using bleach or another sanitizing agent when washing dishes. Ensure the three compartment sink is properly setup in this manner: Wash, Rinse, Sanitize.

    Correction: Potentially hazardous foods (time/temperature control for safety food) shall be held cold at a temperature of 41°F or below unless the permit holder is using "time as public health control" as specified under 3-501.19 to limit bacteria growth. DUMPLING MIX WAS DISCARDED.
  • Critical: Chlorine Sanitizer Solution Concentration based on pH and Water Temp
    Observation: When tested, the chlorine-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils. Observed the sanitizing solution in the sink with a concentration of 0 ppm total chlorine.
    Correction: A chlorine-based sanitizing solution shall have a minimum concentration of at least 50 to100 ppm total chlorine when tested using the appropriate test kit.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days. A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568. Failure to provide a copy of the photo identification card will result in further enforcement action.

The purpose of this visit was to conduct a routine inspection in conjunction with a complaint investigation. The manager was not aware of the complaint. Upon initial inspection of the facility there was no physical evidence, such as cigarettes and ash trays present to indicate smoking was done in the facility. The restaurant had an odor which could be attributed to smoking but could not be confirmed due to lack of physical evidence. The manager states that the customers do not smoke inside the facility. Reminded the manager that smoking is not permitted in the restaurants unless there is an alternate ventilation system which needs to be identified prior to permitting establishment. Complaint Closed.
No violation noted during this evaluation.

    Observation: Wet wiping cloths used for wiping counters and other equipment surfaces were observed stored on the counter.

    Correction: Increase the lighting to provide a minimum of 20 foot candles in these areas.

    Observation: Observed that inadequate lighting was provided in the food preparation areas. 35 fc under hood (three lights out)
    Correction: Increase the lighting to provide a minimum of 50 foot candles in all food preparation areas.
  • Critical: Controlling Pests / Methods to Use When Pests Are Found
    Observation: Methods are not being used to control pests. Observed 1 nymph near the front bar handsink
    Correction: Insects and other pests are capable of transmitting disease to people by contaminating food and food-contact surfaces. If pests are found on the premises methods shall be used to control their presence. Obtain a pest control inspection and fax a copy of the invoice for the area near the handsink for cockroaches and fax a copy of the invoice for the inspection to inspector at fax # 703-385-9568 within 10 days
  • Critical: Conditions of Use/Presence & Use of Toxics Per Law (corrected on site)
    Observation: Pesticides labeled for residential use were observed in the facility and are being applied by the operator to control pests. Observed a can of raid.
    Correction: Remove residential use pesticides from the facility. When necessary for pest control, chemical pesticides must be applied by a certified pesticide applicator to prevent injury and contamination. Removed by foodworker from the facility.
  • Critical: Conditions of Use/Presence & Use/Application of Toxics (corrected on site)
    Observation: The chlorine sanitizer in the wiping cloth bucket is above 200ppm and is being used in a manner that does not prevent the contamination of food, equipment, utensils, linens or single service items. Maintain sanitizer solution between 50-100ppm chlorine.
    Correction: Hazardous and toxic materials shall be applied in such a way that prevents the contamination of food and food contact surfaces.
