The purpose of today's visit was to conduct a risk-factor assessment. In addition to violations cited, the following observations were noted: 1. Kolpak Bagel Walk-in Cooler (WIC)- is unable to maintain a temperature of 41F or below. Please discontinue storage of potentially hazardous foods (PHFs) in this unit until it is serviced and able to maintain proper cold holding temperatures. The following suggestions have been made as a means to better incorporate Active Managerial Control (AMC): 1. Develop corrective actions in response to poor cold/hot holding temperatures, 2. Create reporting system that employees are required to use when cold holding equipment is functioning improperly. During inspection, food and equipment temperature logs were reviewed. Employees recorded that Bagel WIC was cold holding at 54F since yesterday evening, however no corrective action was taken. Please train employees to notify Certified Food Manager and remove/relocate all PHFs when equipment is non-functioning in order to promote public health. Please send copy off Bagel WIC service invoice via fax or e-mail within 7 days.

The purpose of this visit was to conduct a complaint investigation. EHS spoke with CFM about the complaint and asked if any employees had called in sick in the past 2-3 weeks. CFM stated that no employees have called in sick. Employee Health Policy is in place and staff have signed the employee agreement forms. EHS asked CFM to make a chicken cob salad. All ingredients in the chicken cob salad are stored in the Beverage Air 3 door prep cooler at service line. The chicken cobb salad consists of: prewashed and bagged romaine lettuce, diced tomatoes, precooked and bagged hard boiled eggs, bacon pieces, Greek (herb vinaigrette) dressing, Gorgonzola cheese and precooked sliced chicken. The salad is tossed using tongs, which are stored in separate compartments above the cooler, and then served. The ambient air temperature in the Bev Air cooler was 41F. See food temperatures above.
