Contamination from Hands/Preventing Contamination by Employees (corrected on site) Observation: Food employee contacting exposed RTE food (chips) with bare hands.
Correction: Except when washing fruits and vegetables as specified under 3-302.15 or as specified in paragraph D of this section, food employees may not contact exposed, ready-to-eat food with their bare hands and shall use suitable utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment.
In-Use Utensils, Between-Use Storage (corrected on site) Observation: Food preparation and dispensing utensils are improperly stored. 1. Utensils observed in standing water. 2. Utensils observed in between prep refrigerators. 3. The dipping well was observed turned off.
Correction: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored: (A) In the food with their handles above the top of the food and the container
Handwashing Sink/Using/Operation and Maintenance (corrected on site) Observation: The handwashing sinks located in the kitchen and cookline area are not maintained so that it is accessible at all times for employee use (trays and large trash cans were observed blocking the sink basin).
Correction: A handwashing sink shall be maintained so that it is accessible at all times for employee use. Facilities must be maintained in a condition that promotes handwashing and restricted for that use. Convenient accessibility of a handwashing facility encourages timely handwashing which provides a break in the chain of contamination from the hands of food employees to food or food-contact surfaces.

Correction: The handwashing facility identified above is to be used for washing hands only.

CO 1600050 approved. *Cap the interior bar counter top. *Seal wall near dish machine in the bar. *Install counter top in server station. *Grease trap in the basement. *Light in the walk in cooler is burnt out. *Replace the light bulb under the hood. *The front doors are not weather stripped. Post health license and correct all stared items. No violation noted during this evaluation.
