The purpose of this visit was to conduct a follow-up inspection on the walkin cooler. cooler was found to be at 41F and below and is able to keep potentially hazardous foods cold. CFM also gave a copy of corrected menu with consumer advisory. Facility is in compliance.

(see handout provided) issues the required photo identification card with proof of successful completion of a certified food manager's exam. Failure to have a certified food manager on site during ALL hours of operation including food preparation, food service, and cleaning/sanitizing of equipment/utensils will result in closure of the establishment. THE CERTIFIED FOOD MANAGER ARRIVED DURING THE INSPECTION.

    Observation: Employees are not properly sanitizing cleaned multiuse equipment and utensils. While not acively in use, 3-vat sink was observed set-up, with no bleach at the sanitize basin, 0ppm. CFM corrected.
    Correction: The Person in Charge or certified food manager shall train his/her employees to properly sanitize all equipment, utensils, and surfaces after being cleaned using either an approved sanitizer at the adequate concentration or heat sanitization at the proper temperature to destroy pathogenic bacteria.

Employees shall be using suitable utensils such as deli tissue, spatulas, tongs, or clean disposable gloves to handle all ready-to-eat foods.     Correction: Raw foods like poultry, beef, pork, seafood, and eggs shall be stored properly inside refrigerators and freezers to prevent cross contamination. Raw foods shall be stored on shelving units BELOW or SEPARATED from all cooked foods, commercially processed foods, washed produce, leftover foods, etc.

    Observation: Caulking at handsinks and 3-vat sink was observed cracked and peeling, with some areas dirty with mold.
    Correction: Remove caulk at all sinks, clean/disinfect and recaulk the sinks to the wall.

    Observation: The food-contact surfaces of the following equipment were not observed sanitized: equipment (pots/pans) being washed at 3-vat sink.
    Correction: All utensils and food-contact surfaces of equipment shall be sanitized before use and after cleaning. Employee and CFM were reminded that 3-vat sink must be used from right to left so that grease and fats go into the grease trap, not directly into the drain. All pots and pans and anything washed at the 3-vat sink must be sanitized with bleach water. Sanitize basin set-up to sanitize at 50 ppm chlorine.
  • Critical: Conditions of Use / Presence and Use / Restricted Use Pesticide (corrected on site)
    Observation: Restricted, commercial use pesticides present in the facility are applied by the operator who is not a certified pesticide applicator. Sprays bottles of pesticide were observed at back with cleaning supplies.
    Correction: Because of their toxicity, restricted use pesticides must be applied by a certified pesticide applicator to prevent injury and contamination. Do NOT spray pesticides that are for home use in a restaurant, if you see pest activity please contact a licensed pesticide applicator. Bottles of pesticide discarded.
