The previous inspection was marked for follow-up due to building finishes in the kitchen area that are not finished. This is just a risk factor assessment inspection. The finishing items are on a punch list for contractor.
- Critical: Cooling* (corrected on site)
Observation: @POTENTIALLY HAZ FOOD@ noted not being adequately cooled to prevent the growth of harmful bacteria - macaroni cheese from previous day.
Correction: Cool potentially hazardous foods from 135°F to 70°F within 2 hours and within a total of 6 hours from 135°F to 41°F. A longer time for cooling allows an ideal situation for bacterial growth. This has been shown to be the major contributing factor in many foodborne illnesses. The macaroni cheese was disposed of at time of inspection. Reviewed proper cooling techniques.

Observation: The indoor floor, wall and ceiling materials located in the kitchen do not meet the standard of: 1. smooth, durable and easily cleanable 2. nonabsorbent: missing grout on walls (all kitchen wall areas the grout is not uniform due to the grouting of the tiles where "butted" together - AREA OF CONCERN), floor grout - separated or improperly grouted (AREA OF CONCERN), still need to check for broken floor tiles, floor/wall juncture not sealed at bottom of the "chase" (the juncture was laying there to be installed), the block wall in the utility room with the epoxy (part of the chase, back wall and right side) and the egg shell painted on the left side is still area of concern where there is deeper pits for dirt/debris to accumulate (epoxy area was repainted), and window sill at back door - boards separated.
Correction: Refinish or replace the floor material at the area designated so it is: 1. smooth, durable and easily cleanable 2. closely woven and easily cleanable carpet 3. nonabsorbent

Observation: The following indoor floor, wall and ceiling materials located in the kitchen areas do not meet the standard of: 1. smooth, durable and easily cleanable 2. nonabsorbent: screw holes for anchoring equipment that are open, broken floor tiles, missing grout on walls (all kitchen wall areas the grout is not uniform due to the grouting of the tiles where "butted" together - AREA OF CONCERN) and floor grout - some areas there may be separation or not properly grouted - AREA OF CONCERN, grout at the electrical conduit at work table, floor/wall juncture not sealed at bottom of the "chase", block wall at the utility sink has rough areas that will collect dirt/debris - upon entering the utility room the back wall at the utility sink, part of the chase and right wall has been painted with epoxy paint but the wall is still pitted more in some areas - Left side wall is egg shell paint, back window sill - underneath where laminate attaches has a gap where they come together, and seal around back door. Ceiling tile is not in place where construction repairs have been made.
Correction: Refinish or replace the floor/wall/ceiling materials at the areas designated so it is: 1. smooth, durable and easily cleanable 2. nonabsorbent. Employee mentioned installing screws in the holes that anchor equipment to seal the open holes. The observations are areas of concern.

Observation: An air gap between the water supply outlet and the flood rim level of the 3-compartment sink/pre-wash sprayer is not observed. If this direct connection exists between the drinking water system and a source of contaminated water during times of negative pressure, contaminated water may be drawn into and foul the entire system.
Correction: Provide an air gap with a diameter that is at least twice the diameter of the water supply inlet and not less that 1 inch for proper backflow prevention by the air gap.

Not all of the ceiling tiles are in place where construction repairs have been made. The light cover above the ice maker is broken.
